Phew! It’s Friday and I could not be happier. This week has been a really tough one on me and I am so ready for it to be over. Life threw me some curve balls which I was not ready for. I guess this is what makes life interesting… the unknowns. The things that make you grow and change. But now it’s time to move on and look for the good and exciting things, like this Saturday! Not only is it the weekend but we’re having our house warming party. It’s not the typical house warming party either, we’re doing it brunch style… who doesn’t love brunch? Mimosa, Bloody Mary bar, quiches, bagels, coffee cake, you name it and we’ll have it!
So to keep the Friday Favorites tradition alive and well I’ve decided to share my favorite brunch foods with you. Because… well… food of course!'
Eggs Benedict… like for real. Maybe I love this so much because I couldn’t make it to save my life… either way this is my number one go to on a brunch menu. Maybe one day I’ll get inspired and try to make it!
French Toast… drool. But not plain old wonder bread french toast. I’m talking country style french toast with thick pieces of bread, strawberries, blueberries and whipped cream. Add butter and syrup and I’m head over heels in love.
Biscuits and Gravy… You’d think I’m from the South with how much I love this dish. My dad’s family used to make it all the time and it is definitely a comfort food. Flaky buttery biscuits with creamy sausage gravy… okay… I’m officially hungry.
Quiche. Now this one I actually can make at home, but rarely ever do so I am going to be making two this weekend. One with spinach and mushroom the other with ham and cheese. I love pie crust so when you throw a delicious egg breakfast in it… yeah… I’m sold.
Finally, my not so elegant or elaborate family favorite is Cowboy Eggs… or at least that’s what my family calls them. I’ve also heard people call them Eggies in A Basket… which is wrong! Cowboy Eggs people! I make this ALL the time, it’s my go-to staple for weekends. Cut a hole in the bread, throw it in a buttered pan, crack an egg into the hole, cook, flip and done… easy peasy and so yummy!
